QUALTITY PARAMETERS

For roasted coffee parameters such as the residual moisture, the soluble extract as well as acidity and pH are of main importance for quality assurance.


Furthermore, the caffeine content is one of the main quality parameters in coffee, especially in caffeine-free coffee (D.M. 20/05/1976). Nowadays the authenticity of a product has also main impact on the quality. Therefore, we determine the content of Arabica and Robusta in your special blends.

 

 

CONTAMINANTS AND RESIDUES

In addition to the quality assurance parameters and nutritional parameters the testing for organic and inorganic contaminants in green and roasted coffee is of main importance.


In green coffee mycotoxins like Ochratoxin A (OTA) are one of the most frequent contaminations besides heavy metals or exposure to micro-organisms. OTA is heat-stable largely remains intact during the roasting process and passes into the aqueous extract. Hence, we do not only determine OTA in green coffee, but also in roasted and instant coffee.


During the roasting process besides aroma and flavor active substances also undesired substances are formed like acrylamide and furan. The EU Regulation (EU) No. 2017/2158 includes target values and measures to minimize the content of acrylamide in roasted and instant coffee. AGROLAB supports you with accredited analysis of acrylamide.


Due to the process of decaffeination solvent residues like Dichloromethane and Ethylacetate may remain in caffeine-free coffee. We analyze the most important solvents residues in your caffeine-free coffee.


In green coffee also pesticides residues should be analyzed frequently. AGROLAB determines the residues of multi-residues pesticides, as well as Dithiocarbamates and polar pesticides.
