FAO/WHO published reference dose for soy and celery (food allergens)

Reference values for exposure (RfD) are health-related guideline values that make it possible to assess the risk posed by certain allergens.

The United Nations Food and Agriculture Organization (FAO) expert panel concluded that soy does not meet the criteria set for a global priority allergen on the basis of low prevalence and potency. In addition, globally reports of anaphylaxis are rare. However, as data are available to derive an RfD for soy and in many countries, an RfD would help science-based allergen management, they decided about a reference dose. Their final recommendation sets level of 10 mg total protein from the allergenic source.

Celery/celeriac is a priority allergen. However, the geographical distribution of reported allergic reactions is limited to a few European countries. Based on an ED05 (eliciting dose) value of 1.3 mg total protein, the expert commission set the reference dose for celery/celeriac at 1 mg/kg.
